  • 6 medium potatoes
  • 1 large onion
  • 1/2 c. flour or matzo meal
  • 2 eggs
  • 1 Tbs. salt
  • 1/2 t. pepper
  • 2 Tbs. oil

Grate potatoes and onions with a steel blade. Put in a colander so that the liquid drains out. Add eggs, flour, oil, salt, and pepper. Stir to make a smooth batter that will drop heavily from a 1/3 c. measuring cup. Add Crisco to a large frying pan and fry over medium heat until golden brown. Drain on paper towels.

To make ahead, put cooked latkes on a sheet and pan-freeze, then put into storage bags. When ready to serve, put on a sheet pan in 350 ° oven for 20 minutes or until hot.
